SHRIMP & RICE SKILLET

Ingredients: 1/4 cup butter
1 1/2 lbs large shrimp, peeled & deveined
3 or 4 cloves garlic or finely chopped garlic (i would chop)
2 medium size red bell pepper, julienned
3/4 lb. zucchini, cut in half lengthwise & sliced 1/4 thick
1 large onion, chopped
6 cups cooked rice (I choose long grain rice is best)
1/3 cup fresh basil or 2 tsp dried basil
1/4 cup lemon juice ( i use fresh lemon squeezed juice)
1/2 tsp salt
1/4 tsp ground black pepper
Directions: Heat butter in large skillet or wok over med hi heat until hot. Add shrimp and garlic; cook and stir 2 or 3 minutes or just until shrimp turns pink; remove from skillet to plate set aside. To skillet , add peppers, zucchini and onion to skillet. Cook and stir 4 or 5 min or until vegetables are tender. Stir in cooked rice , shrimp, basil , lemon juice, salt and pepper. Sprinkle with Parmesan cheese; garnish with fresh basil.
