    As the days grow cold and grey, many of us find it increasingly difficult to drag ourselves out of bed in the morning. A warm, delicious breakfast packed with autumnal flavors is the perfect panacea for this all-too-common predicament.

    Pumpkin Breakfast Oatmeal

     

    If you’re a fan of pumpkin spice flavoring, this oatmeal is the ideal breakfast for you! Lightly-sweet and packed with iron, fiber, and protein, this oatmeal is a nutritious and filling way to jump-start your day.

    Cook Time: 50 minutes

    Makes: 6 servings

     

    Ingredients: 

    • 4 ½ cups of low-fat milk (or water)
    • 1 ½ cups of steel-cut oats1 cup of canned pumpkin puree
    • ¼ cup of packed brown sugar (or sweetener of your choice)
    • ¼ teaspoon of ground cinnamon
    • ⅛ teaspoon of ground ginger
    • ¼ teaspoon of ground allspice¼ teaspoon of ground nutmeg
    • ¾ teaspoon of salt
    • Optional toppings: apple slices, applesauce, and/or nuts

     

    Instructions: 

    1. Using a saucepan, toast the cinnamon, ginger, allspice, and nutmeg on low heat. Stir the mixture occasionally and toast for 2 minutes, or until the mixture is fragrant.
    2. Stir in the brown sugar or sweetener of your choice.
    3. Add the cup of pumpkin puree, mixing the ingredients to combine them.
    4. Add the milk or water. Raise the heat on the pan, bringing the mixture to a healthy simmer.
    5. Pour the oats into the pot, stirring them into the mixture. Adjust the temperature to medium heat and allow the oats to simmer until they are tender (roughly 20 to 30 minutes). Add salt to taste.
    6. Portion out the oatmeal and serve it with the toppings of your choice. Enjoy!

     

     

    Apple Breakfast Sandwich

     

    This super-simple breakfast recipe is fast, delicious, and nutritious! Healthy ingredients are layered between apple slices, making a sweet and tasty “sandwich” that anyone can enjoy!

    Prep Time: 5 minutes

    Makes: 1 serving

     

    Ingredients:

    • 1 large apple⅓ cup of nut butter of your choice, such as peanut butter, almond butter, etc.
    • 2 tablespoons of dried fruit, such as cranberries, cherries, raisins, apricots, etc.
    • 2 teaspoons of seeds of your choice, such as sesame, chia, pumpkin, sunflower, etc.
    • Liquid sweetener of your choice, such as honey, maple syrup, agave nectar, etc.
    • Optional: nuts of your choice, such as macadamia nuts, almonds, pecans, cashews, etc.

     

    Instructions: 

    1. Take the apple and cut it into three thick slices.
    2. On the bottom layer of the apple, slather the nut butter of your choice. Add a small squirt of liquid sweetener if desired.
    3. Layer a second apple slice on top of the nut butter. Add a small squirt of liquid sweetener. Place the dried fruit and seeds on top of the sweetener.
    4. Place the top layer of the apple on your sandwich. Serve with nuts or a small bowl of granola.

     

     

    Autumnal Brussels Sprout Hash

     

    Make the most of the fall harvest with this flavor-packed breakfast hash! Bacon, sausage, sweet potatoes, and apples all make an appearance in this unique twist on a classic breakfast staple.

    Prep Time: 30 minutes

    Cook Time: 20 minutes

    Makes: 4-6 servings

     

    Ingredients:

    • 2 pounds of Brussels sprouts
    • 1 large sweet potato
    • 6 small redskin potatoes
    • 1 onion
    • 1 apple
    • 6 strips of bacon
    • 2 breakfast sausages
    • 2 cloves of garlic
    • 1 tablespoon of butter or oil
    • Salt and seasoning to taste

     

    Instructions:

    1. Clean the Brussels sprouts, removing the outer layer from each sprout. Chop the sprouts into quarters or halves.
    2. Cut the sweet potato, redskin potatoes, and apple into cubes. Slice the onion and mince the garlic.
    3. In a skillet, fry the bacon and breakfast sausages. When finished, set the bacon and sausages aside. Chop the bacon and sausage into bite-sized slices.
    4. In the skillet, heat the butter and garlic.
    5. Add the onions and allow them to sauté for 2 minutes.
    6. Add the Brussels sprouts, sweet potatoes, and redskin potatoes to the skillet. Stir often. Let them cook for up to 7 minutes or until they are soft.
    7. Add the apple, cooked bacon, and cooked sausage to the pan.
    8. Mix the ingredients and cook them for an additional 5-7 minutes, or until all ingredients are soft.
    9. Top with a fried egg if desired. Serve and enjoy!
